Flavor Notes: Pink Lemonade, Honey, Bergamot
María Belén Díaz is one of the 96 women who are part of the Huila Condor Project and is one of the first women in the region to obtain a certification in coffee processing from The Forest Academy in 2024. Maria produces coffee with her husband, Narciso, and their three sons on the Resinas Farm. After harvest the beans undergo a 24 hour pre-fermentation in cherry, followed by a 36-hour anaerobic fermentation in bags. The result is a vibrant and complex coffee perfect for a summer day. We love working with Forest Coffee to source special coffees like this and hope you enjoy drinking it as much as we enjoyed making it.
